This product is cut from a solid 1/4" thick piece of low carbon steel (our steel has a higher iron content than even cast iron!) - this thickness is the perfect balance between extreme thermal transferring capabilities and weight. The dimensions of the Universal XL Cooking Steel are 1/4"x16"x22", and weigh 26 lbs.. A carry handle has been cut from one end for easy manipulation in the oven or on the grill. Standard oven racks and rectangular grill grates are roughly 16.5" x 24", so these cooking steels get the most coverage while being easy to add/remove!
When seasoned, Cooking Steels offer extremely smooth surfaces allowing pizza, bread, poultry, and more to slide on and off with ease. The large size of the steel
